The combination of Noce, Fiocco and Stinco sections is like buying a miniature prosciutto.

The three sections offer different flavours depending on their position:

NOCE: the most flavoursome part of the prosciutto, cut right from the bone, easy to slice, even by hand, thanks to its reduced marbling.

FIOCCO: the central part of the prosciutto, usually fattier than the Noce, and with a delicate flavour. We recommend slicing this section of prosciutto thinly with a meat slicer to fully savour all its characteristics.

STINCO: the part that absorbs the least salt during processing, as it is completely covered by rind. This results in a sweeter and more delicate flavour. This section can be sliced either by hand or with a meat slicer.

Aged: 20-24 months.

Italian pork thigh, sea salt. Free from gluten, allergens, additives, preservatives and colourings.

Storage method

Keep refrigerated (at between +1°C and +7°C), covering the prosciutto with a dry cotton cloth once the protective wrapping has been removed.

Facts

The microscopic granules that can sometimes be found at the centre of the lean part are not grains of salt but simply crystals of tyrosine, a natural substance resulting from the ageing of protein and evidence of a lengthy ageing process.
